This was too easy and too good not to pass on in case you’ve never done it! This would be stage 1 and on for GAPS diet.
Pork loin (as big as can fit in your crockpot, mine was like 5 lbs!)
2-3 C beef/chicken stock (enough to cover pork for the most part)
- Salt and pepper pork. Place in crockpot.
- Cover with stock and sliced onions. (could use part water as needed)
- Let cook on low for 12+ hours until the pork is tender and falling apart.
Serve with those juicy onions and sautéed apples, homemade applesauce or purple cabbage and apples.
