Coconut-fruit truffles January 5, 2013

1 C assorted nuts/seeds (I did walnuts, sunflower, pecans, almonds)

4 dates

½ C coconut butter/manna

1/3 C dried raisins/cherries

2 t vanilla extract

2 t honey (or to taste)

¼ C shredded coconut



  1. Combine coconut butter, vanilla and honey in food processor to make a paste.
  2. Add dried fruit and nuts, process until small chunks of dried fruit are still seen. (If it’s not wet enough to roll together, add more coconut butter or oil.)
  3. Roll into quarter-width balls, and roll gently in shredded coconut.
  4. Keep in fridge or freezer. Tastiest when cold.

Makes about 30 truffles.
