This was our first Christmas season….and so far it has been a pleasant, far from excruciatingly painful, experience. I wanted to share what we had, and encourage you that even ‘untouchable’ traditions can be reworked and even replaced as needed. We were hesitant to travel being on such a restrictive diet, but with some organization and flexibility from our families, it has worked great!
Christmas dinner #1:
Dinner: roasted turkey, faux mashed cheesy potatoes (cauliflower), broccoli, and spaghetti squash with homemade marinara
Dessert: grain/sugar free cookies and homemade cinnamon applesauce
Grain-free Almond Roca cookies (my version, recipe to come)
Christmas dinner #2:
Appetizer: antipasto, shrimp, banana-blueberry coffee cake, vanilla bean kombucha with pomegranates
Antipasto (Italian salad, omit garbanzo beans and use natural meats for GAPS)
Pomegranate sprinkled-vanilla bean kombucha
Rosemary butternut squash gnocchi
Homemade tomato sauce
