My first grain-free Christmas December 25, 2012

This was our first Christmas season….and so far it has been a pleasant, far from excruciatingly painful, experience. I wanted to share what we had, and encourage you that even ‘untouchable’ traditions can be reworked and even replaced as needed. We were hesitant to travel being on such a restrictive diet, but with some organization and flexibility from our families, it has worked great!

Christmas dinner #1:

Dinner: roasted turkey, faux mashed cheesy potatoes (cauliflower), broccoli, and spaghetti squash with homemade marinara

Appetizer: Italian sausage balls with sauce, veggies with yogurt-herb dip, cheese and seed crackers and ground-beef jerky

Dessert: grain/sugar free cookies and homemade cinnamon applesauce

Grain-free Almond Roca cookies (my version, recipe to come)

Christmas dinner #2:

Dinner: Rosemary & butternut squash gnocchi with homemade red sauce, steak filet, faux sweet potato casserole with pecan crunch

Appetizer: antipasto, shrimp, banana-blueberry coffee cake, vanilla bean kombucha with pomegranates

Dessert: grain/sugar free cookies, peppermint marshmallows, spiced eggnog and pumpkin muffins

Antipasto (Italian salad, omit garbanzo beans and use natural meats for GAPS)

Pomegranate sprinkled-vanilla bean kombucha

Rosemary butternut squash gnocchi

Homemade tomato sauce

Delicious, rich, satisfying grain-free Christmas dinner!

Merry Christmas!

When they had seen him, they spread the word concerning

what had been told them about this child,

and all who heard it were amazed at what the shepherds said to them. Luke 2:17-18
