My husband and I have been having a large salad almost every day for lunch. Sometimes we have a cup of soup or a side of chicken salad along with it, other times just make sure its chock full, so we aren’t hungry soon after ;o)
I usually make a large salad at the beginning of the week and then just scoop it out when its lunch time.
Little prep- very versatile- super yummy.
Since I have been eating salads almost every day for lunch for the last year or so, I am actually to the point where I CRAVE them. If it’s been a day or two of not having one, it truly sounds like the most fulfilling thing in the world!!
The combinations are endless….heres to a sweet and tangy salad:
Spinach and romaine
1 apple- chopped
Dried cherries (or raisins)
½ C + Extra-virgin olive oil
1-2 T ground mustard
1 t sea salt
2-3 T raw apple cider vinegar
1-2 T raw honey
