Mini coconut-brownie bites July 29, 2012

Yum! I was inspired by an item that I saw at a natural food store (for WAY too much!), so tonight I whipped up these little guys:

 

1 C almond flour (can chop them yourself in food processor)

2 T cocoa

3 T 100% maple syrup

3 T coconut oil

½ C fine coconut flakes

1/8 t sea salt

½ T real vanilla extract

 

Combine all ingredients in food processor until a wet dough forms. If it’s too wet, add more flour. Too dry, more coconut oil. Create little 1 inch balls, and roll in additional coconut flakes. Freeze on plate 1 inch apart. Put in container in freezer to enjoy here and there, or put in fridge 5 minutes before you want to serve.

    You can eat this on your diet, too! Just use xylitol (my fave all natural sweetener) or stevia. Yum!
